Teacher Eats: Appreciate your Love for Seafood towards Marine Sustainability at Marriott Manila

WE LOVE SEAFOOD! There’s no one in my family will not take risk (health issues) just to eat prawns and lobster. As a kid, I learned how to eat many fish as part of my healthy diet (together with fruits and veggies). And even today, we will be VERY EXCITED having seafood meal at dinner than any meat dishes. Sadly, we are not aware that our marine life is constantly loosing its life because of global warming and too much demands. How can we still enjoy our favorite prawns with the appreciation towards sustainability?

 When it comes to seafood, Marriott Hotel Manila is committed to serve the best quality and sustainable kind. With the nationwide Sustainable Seafood awareness this March, the hotel further increases its eco-efforts by offering ocean-wide of sustainable shrimps.

So, why shrimps? According to WWF, shrimps are the most traded marine product today and constantly increase by 10 percent annually. “Our brand’s well-established corporate responsibility, “Spirit to Preserve”, we feel responsible of providing not just high-quality dishes but also sourced responsibly that results to more years of great food and satisfied seafood cravings,” says Marriott Executive Chef Meik Brammer.

Wednesdays at their Marriott Café has never so fresh and sumptuous with the addition of premium quality black tiger prawns, called Selva Shrimps, on their buffet spread. Selva shrimps has a “Best Choice” rating for sustainability because these are naturally raised in mangrove forests, no fertilizers or chemicals were used and supports small farming communities in Southeast Asia. It is considered a healthy shrimp for its firm texture, succulent flavor and vibrant color.

Better prepare those shrimp-petite to catch as much as you can to be cooked your way as well. Marriott chefs also have recommended recipes that are not to miss either, such as Grilled Shrimps marinated in Indonesian Sambal, a famous spicy and flavorful sauce.  For that local touch, shrimps are made into Manila-style Sisig – Chef Meik proudly exclaims, “It will hook someone to come back for more.”

For a more refined indulgence, Selva Shrimps are also available at their Greatroom lobby lounge as bar snacks. It’s a perfect munch over meetings, evening cocktails or for passing time. Menu includes Boiled Shrimps with sausage and potatoes on the side, Baked Shrimps with chimps and dips, Okoy or shrimp fritters, and Shrimp Kapao in a bun.
