Filipino cuisine has gained its rightful global position to be “the next big thing”. How it has evolved while keeping its authentic roots is the secret ingredient. But this is just the beginning. Marriott Hotel Manila takes the Filipino cuisine to a new level – Vegan level on that note. The hotel took inspiration from the growing vegan or plant-based eating community in the country. It’s a culinary treat catering to various, if not all, cravings such as foodies, vegans, healthy seekers and any appetite who’s up for something new.
“We thoroughly studied and searched for quality plant alternatives that provide the same aroma, texture and flavor to replace the meat.” adds their Executive Chef Meik Brammer. They challenged the popular “meaty” dishes such as Bicol Express, Sisig and Bacolod Inasal to an all-vegetable makeover. Substituting the pork in Bicol Express is a variety of mushrooms such as portabello, shitake and Tagaytay’s oyster mushroom. Mushrooms already are rich and meaty textured perfect to combine with their homemade spicy coconut cream.
Sisig turned into a hearty fare by using banana hearts (puso ng saging) and breadfruit (kamansi) instead. These are tasteful ingredients and can easily be mistaken as pork with eyes closed. For Bacolod Inasal, they chargrilled high-protein alternative tofu to be dipped in traditional Iloilo vinegar, sinamak.
Marriott’s fresh take on the local cuisine makes it more available and fascinating. Vegan or not, indulge in a buffet-style for only Php 1,950 on lunch every Saturdays to Fridays and Php 2,100 on dinner every Sundays to Thursdays. Enough reason to take pride in local and healthy eating.
